Fiesta Sinigang

Fiesta Sinigang? Yes you heard it right! Its my hubby’s favorite

ulam. I named it Fiesta Sinigang because all of the vegetables you could think of to be part of this dish is present in this cooking (even the substitute veggies).


1 kilo Spareribs, chopped to serving portions

2 tablespoon oil

1 cup tomatoes, sliced

1 whole onion, sliced

1/2 head garlic minced

2 cups gabi cut in halves

2 cups sigarilyas, deveined and cut to 2 inchesthick

2 cups sitaw/string beans

3 medium sized eggplant divide to 2 then quartered

1 bundle okra

2 cups labanos

1 liter water

1 bundle kangkong or petsay

1 pack tamarind mix

1 long green chili

salt and pepper to taste


Saute garlic, onion and tomatoes in oil. Add pork and simmer until its half cooked. Add the hard vegetables like gabi and labanos. Put salt then add water and let it simmer until the gabi is tender. Add the tamarind mix and let simmer for another 4 minutes. Taste if it has the right tartness and flavor, adjust if necessary. Once the meat is easily torn by fork, add the remaining veggies except for the KangKong. Bring it to boil for another 2 minutes then add the leaves and chili. Season to taste.

Serve hot with Rice. Ideal with Fish sauce with hot chili on the side. =)
